When I came across this recipe on Pinterest, I knew I had to try it. The ingredients were healthy, minimal, and best of all… I had all of them readily available in my pantry! It has no added sugar, AND it’s egg and dairy free. Amazing! Even though the title says they’re for “breakfast,” they make a great anytime snack. If I have leftovers, I wrap it in saran wrap, roll it into a log, and freeze for use next time.
Cranberry Oat Breakfast Cookies {source}
Makes about 12 BIG cookies, or 16 smaller ones.
Ingredients:
- 1 1/2 cups oatmeal (quick or old-fashioned)
- 2 ripe bananas (mashed until creamy)
- 1/3 cup raisins or dried cranberries
- 1/4 cup chopped walnuts
- 1 cup unsweetened applesauce
- 1 tsp. vanilla extract
- 1 tsp. cinnamon (or more if you’re a cinnamon-lover like me)
Directions:
- Preheat oven to 350 degrees
- Mix mashed bananas, oats, raisins/cranberries, and walnuts together in a large bowl.
- In a separate bowl, combine the applesauce, cinnamon, and vanilla extract.
- Add the applesauce mixture in with the rest of the ingredients and let sit for 10 minutes.
- Drop the cookie dough onto a lined cookie sheet.
- Bake 30-35 minutes or until golden brown.
- Let cool for 5-10 minutes on a cooling rack.
This is not only a healthy treat for mom, but a great snack for baby too. Noelle gobbles this right up and often asks for seconds. With heart-healthy oats, protein and healthy fats from the nuts, and good carbs from the fruits… how can you go wrong? Try it and let me know what you think!

I do this recipe all the time for school snack! We just omit the nuts since we’re in a nut free classroom.

I make something similar to this for M all the time! Instead of bananas and applesauce I use a can of pumpkin and I do use an egg to help everything bind together. I like to use chopped prunes too in place of some or all of the cranberries since I don’t love that the cranberries have so much added sugar. I suppose they’d be too bitter without it, but have you ever seen unsweetened dried cranberries? I wonder if they exit. Anyway, that’s just a long way to say these are great – especially when I’m pressed for time and need to make daycare lunch quickly! plus they’re really clean eating…
ETA – for nut free cookies you can add ground flax for protein, which is what I usually do for M’s baked goods :)

Even without cranberries & nuts they are SO good, I think I ate a whole batch in 1 afternoon once…… maybe…. lol

@mrs. high heels I made them this morning but I’m not sure if I baked them correctly. I baked them for 40 mins @ 350 degrees. I know that’s longer than what your baking instructions indicate but they were very moist from the inside. The end result left them still a tiny bit moist from the inside, but the outside is toasty. Are they supposed t be moist from the inside?

@X0X0X0: I’ve found that they are a little moist on the inside (but not super moist) when they come right out of the oven, but I notice that after a couple hours they firm up more (I actually like them best the day after I bake them). I think some moistness from the banana is normal.

@Mrs. High Heels: I just made these tonight. I omitted the cranberries, walnuts and cinnamon and substituted for .5 cup chocolate chips. Soooo Good! A much healthier dessert.

I omitted the dried fruit, subbed flaxmeal for the nuts, and used a blueberry + purple carrot Happy Baby pouch instead of applesauce (because we didn’t have any).
