Here’s every indulgent autumnal treat in one concentrated package: a pumpkin muffin, studded with chocolate chips, then filled with dulce de leche. A perfect way to celebrate the beginning of the most wonderful month of the year– October!
I wouldn’t call these muffins pretty, and they aren’t healthy by any means, but one of these beauties will satisfy your pumpkin craving for nearly half the calories of the muffins at a little coffee shop whose name rhymes with Aw Shucks. Just sayin.
The muffin recipe is my favorite fall standby from Skinnytaste. But instead of mixing walnuts into the batter before baking, I mixed in a half a cup of mini chocolate chips.
Then, to take this formerly healthy muffin completely over the edge of sanity, I made a little indentation in the batter and filled it with one rounded teaspoon of store-bought dulce de leche.
You can probably create a tidier-looking muffin by putting a little more batter on top of the filling. But I didn’t have any batter left over, so my dulce de leche just flowed, volcano-like, over the top of the muffins.
People. These are excellent. If you’re lucky, the chocolate chips will settle evenly throughout the finished muffin. If you are really lucky, they’ll all sink to the bottom and create a delicious fudgey layer at the bottom of your muffin. Yes, another layer of decadence under the layer of caramel gooeyness.
