I think the best part about pumping/breastfeeding is that you’re allowed to eat COOKIES to help get the milk flowin’! This recipe is simple enough where I was able to whip up a batch just this morning at 5am while the baby was sleeping. 40 minutes, tops. These are REALLY good and this is easy because I’m not much of a cook or a baker. This is also much cheaper than buying those pre-made expensive lactation cookies!

Lactation Oatmeal Chocolate Chip Cookies – from Food.com

Ingredients for 2 dozen cookies:

1/2 cup butter
1/2 cup sugar
1/2 cup firmly packed brown sugar
1 7/8 tablespoons water
1 tablespoon flax seed meal
1 eggs
1/2 teaspoon vanilla
1 cup flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 1/3 cups oats
1/2 cup chocolate chips (or more… tee hee)
1-1 7/8 tablespoon brewer’s yeast

Directions
Preheat oven to 350°.
Mix the flaxseed meal and water and let sit for 3-5 minutes.
Beat butter, sugar, and brown sugar well.
Add eggs and mix well.
Add flaxseed mix and vanilla, beat well.
Sift together flour, brewers yeast, baking soda, and salt.
Add dry ingredients to butter mix.
Stir in oats and chips.
Scoop onto baking sheet.
Bake for 12 minutes.
Let set for a couple minutes then remove from tray.

Some of my tips:

The brewer’s yeast was pretty difficult to find at markets so I ordered it from Amazon. The amount for brewer’s yeast seems like it was a range, so I went ahead and just made it 2 tablespoons. The flaxseed meal is at Trader Joes and since I’m a huge chocolate fan, I got dark chocolate chips and put in 1 cup instead of 1/2.
