This is an easy to make meal that everyone in our family loves! Even though it is spicy, it is Little Lion approved!

Makes 4 servings – Calories- 220  Carbs – 2g  Fat – 12g  Protein – 26g


  • 1 lb boneless skinless chicken breasts
  • 1/2 cup hot sauce (any brand)
  • 3-4 tbsp. cream cheese (more or less depending on desired creaminess, I use 4)
  • Buns, or tortilla chips for serving, or you can add it to the top of a nice big salad!


Cut chicken into smaller pieces so that it will cook more quickly (I buy chicken tenders to save time). Place chicken, cream cheese, and buffalo sauce in a saucepan on medium heat. Cover and allow to heat, for about 5 minutes. This will help the cream cheese melt (especially if you are like me and don’t take the time to soften first.)

Stir as cream cheese melts, until it is mostly incorporated into the sauce. Simmer until chicken is cooked through (about 10 minutes).  If you have an adorable helper like I do, it’s a good time for some kitchen fun. Right now we are working on learning to climb into and out of the kitchen tower independently!  You can also use this time to prep your veggies or buns (or whatever you are serving this with).

Check to see that the chicken isn’t pink in the middle before removing from heat.

Once chicken is cooked, you will need to shred it. I do this by pouring all of the contents into our large standing mixer. Using the paddle attachment, turn on a low setting. The paddle will shred the chicken and incorporate the sauce into the chicken. If you do not have a mixer, you can shred the chicken with a fork using this method, then stir to incorporate the sauce into the chicken. Serve immediately, or put it back on the stove on warm until you are ready to serve!
