This is one of those ridiculously easy, you can do it with one hand, type recipes. But more importantly, it tastes delicious! I make it throughout the year because it is SO EASY to make – who doesn’t like a set and forget recipe with less than 5 ingredients?? However, it is really ideal for holidays because of the cranberry element. It’s so pretty and festive looking, and I often bring it to potlucks because it holds up so well.
I N G R E D I E N T S
- 8 oz. bottle of Catalina (or Russian) dressing
- 1 packet of onion soup mix
- 1 can cranberries (whole or jellied – both work)
- 12 boneless, skinless chicken thighs (that’s what I used this time around, but I’ve also used boneless chicken breasts, and bone-in thighs – they all work – you’ll just have to adjust the time accordingly. About 45 min for bone-in thighs, and 55 min for breasts)
Preheat oven to 350 degrees. Lay out the chicken in a 9 by 13 baking pan. Mix the first 3 ingredients together. Pour all over chicken and bake for 30 minutes. That’s it!
I like to serve it over rice with a side of roasted vegetables, mashed potatoes, or in this case, mashed cauliflower. And here is where I need to insert my ravings about the awesome pressure cooker I just scored! While the chicken was baking, I made that mashed cauliflower in the pressure cooker in 5 minutes time! You can also turn this chicken into a pressure cooker recipe. Just dump the chicken and the ingredients in the pressure cooker and pressure cook it for 10 minutes. Done!

@sweetpea612: It’s so easy, you don’t need a recipe! I have an electric pressure cooker. What I do is pour a cup of water in the cooker, put a steamer basket in the pressure cooker, add the cauliflower florets, and pressure cook it for 3 minutes. Let the steam release naturally, take out the cauliflower, and mash it up with a pat of butter, and season with salt & pepper! If you don’t own a pressure cooker you can just steam the cauliflower like you would steam other veggies, mash it all up, and season.

This looks so yummy!
My easy go to dinners aren’t as pretty looing, but my husband loves when I throw porkchops and applesauce in the slow cooker, and when I make cheeseburger wraps: Ground beef, bacon, onion and cheesewhiz (could use cheddar) wrapped in a tortilla and over baked. They’re both easy to make.
