Do you have some recipes that just bring back great memories?  This is one of mine.  This is a cookie that my Grandmother used to make when we would go camping or to pot luck dinners.  I remember she would always get great comments about how delicious and flaky they were.  She would always laugh and see if they could guess the secret ingredient.  No one ever was able to guess that she crumbled up potato chips into her cookies, which gives them great flavor and texture.

I haven’t made these cookies in years, but I decided on a whim to give it a try a few weeks ago.  I now live in the house my grandmother lived for so many years, and I often feel close to her when I get inspired to make her recipes.  Not only was I recreating  the taste that gave me so many great memories, but I was doing it in her kitchen.  I love these cookies and I hope you enjoy the recipe


Simple and Delicious

I N G R E D I E N T S :

½ cup granulated sugar
1 cup butter
1 tsp vanilla
1 ½  cups flour
½ cup chopped nuts
¾ cup of potato chips crushed by hand

D I R E C T I O N S :

Cream butter and sugar
Add vanilla
Gradually add flour and mix well
Add nuts
Fold potato chips into batter
Drop by spoon on a lightly greased cookie sheet
Bake at 340 degrees for 15-18 minutes (the cookies are usually done when the edges get toasty brown)
When cooled, sprinkle with powdered sugar


Joe was excited because this cookie dough contains no raw egg!
