This is a simple weeknight meal that serves as a great way to stretch your veggie supply!
Who doesn’t fondly recall the potato skin craze of yesteryear? Fortunately for us they are enjoying a renaissance!
Ingredients:
- Sweet potatoes– 1 potato per adult, 1/2 potato per child
- Meat filling (if you wish)– about 1/4 a cup per potato half of ground beef, sausage, shredded chicken. Or the classic, bacon! Of course you could always omit this!
- Veggie filling– entirely up to you! We used spinach and corn since it was what we had on hand. I think peppers, tomatoes, or beans would all be great!
- Cheese– about two tablespoons per potato half. Again, this can be omitted!
- Coconut oil (I used Trader Joe’s spray can variety).
- Spices: You pick. I used salt, pepper, Hungarian paprika, and cumin.
Directions:
First, bake your potatoes until they can be pierced through. I did mine in the microwave, but you can always bake them in the oven!
While these are baking, prep your fillings: brown the meat or get the leftover chicken out of the fridge. Chop the tomato or onion, etc. Grate the cheese.
Set your oven to broil.
After the potatoes are soft and cooled, cut them in half and scoop out most of the flesh, leaving a little. Save the flesh for later use. (I made enchiladas with my leftover sweet potato!)
Take your potatoes halves and place them cut-side up on a baking sheet. Spray with coconut oil, and season to taste. Â I made most of them very spicy, but left one less spicy for Scribble. I love heavily seasoned sweet potato fries, and wanted to replicate that flavor in this dish.
Let the potatoes broil a little until the flesh begins to caramelize, maybe five minutes depending on your broiler’s performance.
Take them out, flip them, then oil and season the skin. Put them back in the oven and broil them until their skin gets blistered and crispy, maybe another five minutes. Check frequently!
Flip them over, fill em with your prepared toppings, and put them back in the broiler to allow the cheese to melt (if you used it).
I like to serve these with a salad, and little mixture of greek yogurt and hot sauce (you can see one of my favorite brands in the pic above!)

I just made this and it was a total hit! I stuffed ours with taco meat—delicious! I had extra filling leftover, which means I need to pick up another sweet potato STAT so I can enjoy it again.
