Mornings are my favorite time of day with Little M. He’s in a wonderful mood, we’re relaxed and he’s HUNGRY and willing to eat anything. Lately Little M has been really into helping me cook, especially when it’s something that requires measuring. It’s a true test of patience to let a young two year old measure out flour one small scoop at a time, but so fun to have a little helper in the kitchen. I try not to schedule anything that has us leaving the house before 10am just so we can enjoy this special time together.

We made these delicious banana pancakes together this week. I loved them because the bananas provide all the sweetness and just a few mini chocolate chips are the only added sugar. You could even add a little flax meal or brewers yeast to up the nutritional content, if you’d like.

Banana Chocolate Chip Pancakes

ingredients

1 c. white whole wheat flour
2 t. baking powder
1/4 t. salt
1 large ripe banana, mashed (I used 1 1/2 medium bananas)
1 c. milk
1 egg, beaten
2 t. canola oil
1 t. vanilla
1/4 c. mini chocolate chips

directions

1. In a medium bowl, combine all dry ingredients and mix well

2. In a second bowl, combine all wet ingredients and mix well

3. Add wet ingredients to dry and stir to combine.  Stir in mini chocolate chips

4. Heat a frying pan and spray with non-stick spray. Cook pancakes until bubbles appear, flip and cook until golden

Serve with banana slices, a few mini chocolate chips sprinkled on top or a little drizzle of pure maple syrup.
