In our house, it seems like nearly every meal includes chicken or ground turkey.  They tend to go on sale frequently, they are healthy options and I can always come up with something to make with them without thinking too hard or requiring ingredients beyond our normal pantry staples.

But really, don’t we all get stuck in a rut sometimes?  I definitely do.  If you are looking at that package of ground turkey, dreading the thought of another turkey burger or pasta with meat sauce, this recipe is for you.  If you are in a hurry to get dinner on the table, this one also fits your bill.  If you are looking for a way to sneak veggies into your child’s diet, this is a good choice.  And if your pantry is looking a little sparse, you may still find that you have everything you need to make this recipe.

These Sloppy Joes with ground turkey are delicious, and they are so easy to make. Colin will happily devour them, and Mr. Confetti requests them any time they slip from the rotation for more than a few weeks.

Sloppy Joes with Ground Turkey

*Ingredients:

  • olive oil, to brown turkey
  • 1 package lean ground turkey
  • 1 onion, diced
  • 1 bell pepper, diced (any other sneaky veggies are inserted here – I usually use whatever I have in the house.  In the past, I have included celery, carrots and mushrooms – just cut them up small)
  • 3/4 cup of ketchup (I always eyeball this – just add enough to make it feel sloppy enough for your taste)
  • 2 tbsp mustard (I have used yellow and honey dijon, depending on what was in our fridge – both were delicious, and I usually added more than 2 tbsp – that is a good starting point though)
  • 1 tsp garlic powder
  • several dashes of Worcestershire sauce
  • 1 tbsp of brown sugar
  • salt and pepper, to taste

Directions:

In a large skillet over medium to high heat, brown the ground turkey until no longer pink.  Add your veggies and stir occasionally, until they are beginning to soften.  Drain any excess liquid.  Then, add the remaining ingredients and simmer for 15-20 minutes.  Serve on a toasted bun.

*There are a lot of notes in the recipe ingredients, because I rarely make these the same way twice.  I tend not to measure and go more by look and taste, and when you make these, you can taste and modify once you have added your sauce ingredients to get it to your liking.
