Mr. Blue and I almost always eat our breakfast on the way to work.  We just never seem to get ready in time to eat at home, so I’m always looking for transportable breakfasts. This week, I tried something new with what I had on hand, and it worked like a charm.

Breakfast Muffins

1 tube of crescent rolls
5 eggs
8 small pieces of bacon (or the breakfast meat of your choice)
shredded cheddar cheese
1 tbsp. butter

Preheat oven to 375 degrees.  Scramble eggs and cook breakfast meat. Separate crescent rolls and make them in a ball.  Roll them into a thin circle. Add a spoonful of eggs to the center of the crescent roll.  Crumble a piece of bacon on top of eggs and add a sprinkle of cheese.  Take the edges of the crescent roll and pull them over the top, pinching all the edges together until the crescent roll entirely covers the filling.  Place the seam side down in a greased muffin pan.  Cook for 15 minutes.  Remove and rub butter on the top of the breakfast muffin.

We put ours in the refrigerator and then pop them in the microwave for about 30 seconds for 2 muffins.  They reheat great and are super easy and not messy for our car breakfasts!
