I like fish. I swear I do. I don’t however like having my house smell fishy nor do I like fish that tastes fishy. The idea of fish (healthy, allegedly delicious, good brain food) always sways me into trying new recipes, which I rarely make again when they inevitably disappoint. I swear restaurants have some magic way to make fish taste less like something that just swam out of a larger body of water, salt, and shark poo, but I haven’t mastered the technique at home.
When I saw a recipe for Parmesan-Crusted Tilapia that claimed to take 10 minutes to make, I decided it was worth a try. We had frozen tilapia fillets in the freezer and happened to have all the ingredients at home, so we made this for dinner last week. I modified the original recipe just a bit to suit our tastes: used a little more cheese, added garlic, and changed the recommended seasoning. It was actually delicious, and the boys even ate it. I believe I previously referenced their current meat-hate, so this was significant. I love that I can come home, make this fish, and literally have dinner completely on the table in minutes. Winning!
Ingredients:
- 4 Tilapia Fillets (defrosted)
- 1/4-1/2 Cup Parmesan cheese, depending on how cheesy you would like it. Big back here used 1/2 a cup!
- 1/8 Cup butter, melted
- 1/2 Teaspoon minced garlic
- 1 1/2 Tablespoons light mayo/Miracle Whip
- 1 Tablespoon Fresh Lemon Juice
- 1/2 Teaspoon Italian Seasoning (the original recipe uses dill, but I’m not a fan, so I changed to generic Italian seasoning)
- Pepper to taste
Turn the oven on to broil. Place tilapia fillets on a baking sheet covered with foil for easy clean up. Mix all the other ingredients in a bowl. Meanwhile, place the tilapia in the oven for 4 minutes. Remove the pan and flip the fish over. Add the mixture in the bowl to the tilapia fillets (raw side should be on top now). Return to oven for another 3-4 minutes.
That’s it! It’s the easiest recipe even and was delicious. It’s quick enough to throw together that it’s perfect for a weeknight meal.

Also, how much Italian Seasoning did you use? Was it 1/2 tsp or 1/2 tbsp? I’d guess TBSP, but I wouldn’t want to overdo it!

Me and my father both won’t eat “fishy” tasting fish. Which means we stay away from cod and fish that has not had ideal freezing procedures. Salmon and halibut are usually safe bets, and I haven’t run into fishy tilapia either

I love fish. I’ve made a similar version of Parmesan crusted tilipia using breadcrumbs. My family loves it. It’s so quick to make too.

We eat lots of salmon, almost always cooked on the grill to keep the stink out! M loves salmon any way he can get it – last week he inhaled an entire package of smoked salmon for lunch. So salty!

@Mrs. Pinata: I just sprinkled it over the fish because I forgot it until the last minute, but I would say about 1/2 tsp for 4 fillets. It depends how seasoned you like things, though!

ooo I need to do this next time I buy tilapia. Usually I just season it and pass it off to Mr. Train to grill but this looks delicious
