Before Baby Markers was born, almost every Friday night we would stay in and have pizza and wine night. We’d make our own pizza and sit drinking wine, talking about the week and anything else that came to mind. This became our favorite time to spend together and we looked forward to it all week. Now with a crazy toddler running around and varying schedules, we’ve gotten away from it. The other night Mr. Markers brought it up and we both agreed it was time to reinstate pizza and wine night, if only for the conversation!

This is one of our favorite recipes for homemade pizza:

Brussels Sprouts, Grapes, Pancetta & Goat Cheese Pizza 

Ingredients:

  • Trader Joe’s Garlic & Herb pizza dough
  • Olive oil
  • 2 minced garlic cloves
  • Brussels sprouts leaves or pre-shredded brussels sprouts
  • Red grapes
  • Pancetta (cooked over medium-heat until crispy)
  • Thinly sliced shallot
  • Mozzarella cheese
  • Goat cheese
  • Balsamic vinegar or glaze

Roll out the pizza dough to desired thickness. It will stick, so use flour as needed. Flour a cookie sheet or pizza stone, lay dough out and smooth out uneven parts. Mix olive oil and garlic together, brush all over pizza (especially the edges which will be your crusts). Sprinkle shallots, pancetta and brussels sprouts all over pizza. Cover with mozzarella cheese, then add grapes and goat cheese to the top. Cook at 350 degrees for about 15-20 minutes or until golden brown. Drizzle with a good aged balsamic vinegar before serving.
