I saw this recipe on Pinterest and wanted to try it so much. It seemed like such a good breakfast muffin filled with protein and grains with a touch of sweetness and fruit.
The ingredients are:
- 1 & 1/2 cups flour
- 1 cup oats
- 1/2 cup brown sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 cup vanilla yogurt
- 2 medium sized ripe bananas
- 1/4 cup melted butter
- 1/4 cup milk
- 3/4 cup peanut butter
- 1 tbsp vanilla extract
- 1 large egg
- 1/2 cup chocolate chips
You mix all the dry ingredients together in a bowl. Meanwhile the eggs, bananas, yogurt, milk, vanilla, peanut butter, and butter are all combined in a food processor until it’s a nice thick texture. Combine that with the dry ingredients and chocolate chips and pop them in the oven at 375 for around 20 minutes.

Just want to check – are these mini-muffin size? I have a lot of overripe bananas that need to be dealt with. I’ll use sunflower butter since my little guy’s allergic to peanuts. Thanks for the recipe!

Alright, we can do these! Did you add the flour mixture to the wet mixture in the food processor, or the other way around and mixed it by hand?

I’ll have to try these with Barney Butter and enjoy life chips for my allergic DD but these sound great! I wonder how it would be with greek yogurt, it’s all I have right now!

@Mrs. Chocolate: These turned out so great! My DD especially loved them, she had two today haha… I replaced the PB with almond butter (Barney Butter), and used allergy-friendly “chocolate chips”, and plain Greek yogurt and one Tb honey since I didn’t have vanilla yogurt. Thanks!

Great, I was trying to scroll past the pic really quick but LO’s eagle eyes caught it in a nanosecond so now she’s breathing down my neck asking to make them! They do look yum!
