I was staring at yet another bunch of over ripe bananas hanging from my counter on a rainy day and I thought it might be nice to do some baking with Drakey. I decided to try out this banana bread recipe because it was super easy and fast, and I had all the ingredients on hand in the pantry. Best of all it was delicious and kid approved!
Ingredients:
3 or 4 ripe bananas, smashed
1/3 cup melted butter
1 cup sugar
1 egg, beaten
1 teaspoon vanilla
1 teaspoon baking soda
Pinch of salt
1 1/2 cups of all-purpose flour

I swear I just wrote up the exact same recipe! The only difference between yours and mine is that I used whole wheat flour and added a handful of semi sweet mini chocolate chips. The kids love this recipe!

I love this recipe and use it all the time! I highly suggest swapping out some, or most, of the white sugar for brown sugar. It adds a yummy depth to the taste of the bread
ETA: I have the same mini loaf pans and do the same thing!

Bananas don’t stick around very long in our house now that little Bunny’s discovered she loves them, but I’ve been craving some banana bread lately. I need to remember to buy extra at the store so I can make some bread.

I use the same recipe too and often make mini muffins instead of bread. I tried this one recently http://www.100daysofrealfood.com/2014/04/30/recipe-whole-wheat-banana-nut-muffins/. I swapped out honey for the maple syrup because that’s what I had on hand. Pretty good too.

I love making mine in silicone muffin cups! Perfect for little hands and to freeze. We always buy two bunches bc LO loves bananas. Extras go in the freezer for smoothies, Popsicles and baking!

We’re twinsies in more than one way! We made banana cake not too long ago either! ^_^ The difference between our recipes is that I use 1/3 cup white sugar and 1/3 cup brown sugar (less sugar and brown sugar keeps it more moist) and non-melted butter.

I LOVE this recipe…and the only way I could even think of making it better is to up the health factor, since you have taste and ease already covered. Here’s how I modified it:
– Replace the butter with 1/2 cup applesauce
– Replace the sugar with 3/4 cup agave nectar
– Replace the all purpose flour with whole wheat flour
– Add tons and tons of KALE! Like, 3-4 cups. Blend all the ingredients including the kale but minus the flour. Then mix the flour and cook, just like you described. You don’t even taste the kale (which is amazing because it’s usually a bitter veggie) and it adds a huge punch of vitamins. Win-Win!!
