We’ve been working hard to utilize all the fresh produce we get from our weekly CSA share, and sometimes it’s a struggle to finish all the fresh lettuce we get. One surefire way to consume it all is to wrap it around delicious fillings. This recipe is easy, quick and healthy, and even though it’s pretty messy for even adults to eat, we make it kid-friendly by simply mixing the filling with rice and letting the kids spoon it out of a bowl.
This recipe is loosely based on this one from the Food Network. We made it with ground turkey, but you could really use any protein at all, and you could include any and all vegetables.
Ingredients:
- Lettuce, any kind
- Shredded carrots, bean sprouts, and chopped cilantro for serving (optional)
Filling:
- 1/4 cup soy sauce
- 1 tablespoon brown sugar
- 1 tablespoon rice wine vinegar
- 12 ounces ground turkey
- 3 scallions, chopped
- 2 cloves garlic, minced
- 2 carrots, chopped
- 1 small onion, chopped
- 1 green pepper, chopped
Drizzling Sauce:
- 3 tablespoons soy sauce
- 2 tablespoons rice wine vinegar
- 2 tablespoons honey
- 1 tablespoon dijon or hot mustard
- 1/2 teaspoon sesame oil
- 1 tablespoon brown sugar
- 1 tablespoon Sriracha sauce (optional)
Directions:
For the filling: In a small bowl, mix the soy sauce, brown sugar, and rice wine vinegar and set aside. Brown the turkey with some cooking spray in a pan over medium-high heat until cooked through. Add the chopped and minced vegetables and cook until they begin to soften. Pour the soy sauce mixture over everything and cook for one minute, then remove from heat.
For the drizzling sauce: In a small bowl, whisk together all the ingredients until smooth.
Serve for lettuce wrap self-assembly, or serve over jasmine rice with the drizzling sauce (or without, if you used Sriracha– it’s spicy!) for the kids.

Mmmm yum!!! This looks so good. It’s supposed to be hot here all week so it would be a good meal for a hot day, too (after browning the meat in a crockpot). Thanks for the recipe!!

I’m not an everyday salad eater so I was happy I was able to set my CSA box to always exclude lettuce. If I do want a salad, I’m happy to use spinach or arugula, which can always be cooked into other things (unlike lettuce), and I’ve found that I like fresh swiss chard leaves on sandwiches and hamburger buns in a way that I think “butter lettuce” should taste like.
