Oatmeal is thought to encourage milk production in nursing moms, so it’s something I’ve been eating for the last week. Although I really like it, I need a little variety in my life, and wanted something different.

After I scoured Pinterest, conducted during a 2:00 a.m. nursing session, I pinned a baked oatmeal recipe to try. It was delicious – and definitely leaned more towards dessert than breakfast — not that I’m complaining!  It sort of reminds me of bread pudding, but made with oatmeal instead of bread.

Ingredients

  • 3 cups old fashioned oats
  • 1 1/2 cups brown sugar
  • 5 1/2 cups milk (I used vanilla soy milk)
  • 1/2 cup peanut butter (I used natural, unsweetened)
  • 3 eggs, beaten
  • 1/2 cup shredded coconut (I threw this in, though the original didn’t call for it)
  • 1 cup raisins
  • 1 cup chocolate chips

Directions

In a small stock pot, combine the oats, brown sugar, milk, peanut butter, eggs, and coconut. Simmer over medium heat for 15 – 20 minutes, stirring well to prevent it from sticking. Remove it from the heat, and stir in the raisins.

Spray a 9×13″ pan with cooking spray, and pour oatmeal mixture into the pan. Top with chocolate chips. Bake at 350 degrees for 30 minutes, and then serve warm. Original recipe inspiration from here.

This was sooo good. I need to cover the pan and put it away so I’m not tempted to pick at it all day long. I didn’t have any in my pantry, but it would probably be great topped with chopped and toasted walnuts, pecans or almonds. Yum!!
