I’m on an breastfeeding elimination diet due to several sensitivities that make Baby Brother Stroller an unhappy little camper. I’ve slowly eliminated foods over the past month based on his symptoms. Currently I’m not eating dairy, soy, nuts, eggs or wheat. It’s been a challenge to say the very least, but the results are worth the effort so far. Except when it comes to sweets. I love brownies and cookie dough. But the essential ingredient that makes a brownie or a cookie really good is eggs. Forbidden eggs. I tried a few vegan brownie recipes, but they were so not worth it. One tasted like banana. If I wanted a banana….
In my quest for a quick, easy protein snack to replace my daily Greek yogurt, cheese sticks, and eggs, I happened to find a solution to my sweets craving too. These bites are little nutritional powerhouses with all sorts of good stuff to help my milk supply and chocolate chips to keep me happy. Little Stroller loves them too!
A few notes about ingredients safe for allergies or an elimination diet: IĀ used Seeking Health Optimal Protein, which is unsweetened and is dairy, egg, wheat, and soy free. If you don’t want to use protein powder, you could add a couple extra tablespoons of ground flax. I added 6T of chia seeds to my bites because I like the crunch they provide, but you could use less. Enjoy Life brand mini chocolate chips are dairy and soy free. Sunbutter is a great nut butter alternative – it’s great for nut-free classrooms too!
Chocolate Chip Protein Bites
1 c. Oatmeal (not quick)
3/4 c. Crisp rice cereal
1/4 c. Ground flax
1/2 t. Salt
2 scoops Unsweetened, unflavored protein powder
2-6 T Chia seeds
1/2 c. Mini chocolate chips
1/2 c. Nut butter or Sunbutter
1/2 c. Agave or honey
1/2 t. Vanilla extract
1. Combine oats, cereal, flax, salt, protein powder, chia and chocolate chips in a mixing bowl
2. In a small bowl heat Sunbutter or a nut butter of your choice for about 30 seconds to soften it
3. Add Sunbutter, sweetener and vanilla to dry ingredients
4. Mix well, adding a bit more agave or Sunbutter if need a little more moisture to make everything stick together
5. Drop balls onto a cookie sheet and refrigerate for 2-3 hours until firm. Roll balls between hands to fully shape
6. Store in refrigerator or freezer

@ShootingStar: The enjoy life brand do not, and they taste good. By taste good I mean they taste exactly like a regular chocolate chip. Most dark chocolate chips don’t have dairy, but many of them have soy as an emulsifier. I tried a few brands from Whole Foods, but they weren’t worth the cost. Enjoy Life was the yummiest IMO.

My son’s preschool classroom has a no sugar, no allergen rule for birthday treats… Which leaves carrots? (Kidding.) But without the chocolate chips (maybe I’ll substitute dried fruit?), these would work perfectly. I’ll need to bookmark this recipe to use for X’s birthday in November.

Bobs red mill has a recipe for gluten free chocolate chip pumpkin muffins that are fantastic. I use King Arthur Flour gluten free baking mix though instead of Bobs Red Mill.
