It took a wicked virus to remind me how much I love popsicles. While I was sick, the only thing that sounded remotely appealing was something frozen, but I wasn’t stoked by the idea of overly sweetened commercial pops. This is an issue I have in sickness and in health, and not just from a nutritional standpoint – I often crave a frozen, slightly sweet snack. Basically, frozen fruit but on a stick is what I’m after.

Anyway, last week when I subsisted on popsicles I recalled this hydrating version made with berries and coconut water we loved last summer; now that we’ve been snacking on them again I’m pretty sure they’ll be a warm weather favorite two years running.

This time of year I love having snacks ready to go that double as hydration. It’s not only when I’m sick that I could use help in this department. Whether you’re pregnant, nursing, or chasing around babies and kids in the heat, we all can benefit from incorporating water-rich foods in our diets. These popsicles just happen to be a pretty and fun way to do it.

Hydrating Berry Popsicles

1 cup berries (use one kind of a mix)
1 cup coconut water
0-2 tablespoons honey

Blend the berries and coconut water together until smooth. If desired, add honey to taste and blend to incorporate. Pour into popsicle molds and freeze until solid, at least 6 hours.

Alternately, pile berries into popsicle molds and top off with coconut water.

Notes:

We love these without added honey, but taste the puree to decide whether you’d prefer a little extra sweetness. This may depend on your personal tastes but also how sweet your berries are.

If you don’t have a popsicle mold, you can use a small paper cup and craft sticks, as I did with these yogurt and mango pops. (Ahhh look at little Zane!) Or, skip the pops and try out DIY infused waters.
