When Halloween approaches, I find myself equally excited about pumpkin seeds and candy corn. This is the first year it occurred to me to combine these two seasonal treats, and I can’t believe it took me this long. Roasty, salty, crunchy pumpkin seeds are a happy counterbalance to sweet, chewy candy corn. Throw in some almonds and raisins, and you have a satisfying and addictive trail mix.
This is also the first year we carved a pumpkin with our 3-year-old. He and the 1-year-old got their hands dirty pulling out the pumpkin guts, and then we made the sorriest Jack-o-lantern you’ve ever seen. Did I mention it was my pumpkin carving debut, too? The baby pulled out the bottom two teeth of my already rough specimen, and Zane adding a finishing touch of randomly-spaced toothpicks. We placed it on a side table near the front door, and I smile every time its wonky face catches my eye.
While our family may be new to pumpkin carving, we are experienced at putting the seeds to use. If you’re looking to roast pumpkin seeds for the first time, or just want to freshen up with some helpful tips, the Oh She Glows roasted pumpkin seed recipe is all you need. Angela’s clear and helpful steps will give you tasty, crunchy results, guaranteed. If you want an excuse to eat candy corn or are just looking to fill out the snack, I highly recommend taking it a step further and making the roasted pumpkin seed trail mix below.
Here’s to Halloween traditions, both old and new.
Roasted Pumpkin Seed Trail Mix

@autumnlove: Ohmygosh stop. it. I was thinking of trying peanuts next. At this rate, I’ll be done with candy corn long before Halloween.

@Mrs. Tiger: Haha I really wish I had taken a photo, if only to document it for our family. It was the last little chunk of time we had together before heading out of town, and now it’s rotting! Good excuse to give it another try.
