One of the things that Little Oats is really into lately is baking. She loves checking the ‘list’ (recipe) and gathering ingredients. She really likes to stir, and her favourite part is tasting. We’ve made a few different recipes lately; cookies, cake, muffins and edible playdough! But last Friday, Mr. O was home, and he and Little Oats decided to make his favourite muffin recipe of all time: Maple Syrup Muffins. They aren’t the healthiest recipe in our repertoire, but they are seriously delicious.

Maple Syrup Muffins

Ingredients:
1/4 cup butter
1/2 cup white sugar
1 tsp salt
1 1/4 cup flour
2 tsp baking powder
3/4 cup rolled oats
1/2 cup milk
1/2 cup maple syrup

Glaze:
1 tbsp butter, melted
1/2 cup icing sugar
1 tbsp maple syrup

In a large bowl, beat together butter, sugar and salt until light and fluffy. In a separate bowl, mix together flour, baking powder and rolled oats. Using a pastry cutter (or two knives, or your fingers), blend the butter mixture with the dry ingredients until crumbly. Stir in milk and maple syrup until just combined. Spoon into 12 greased or lined muffin cups, and bake at 350 degrees for about 20 minutes.

Mix the glaze together, and spread over the muffins while still warm. Enjoy!
