I am a huge fan of eggs, and I especially love having them in quiche. Quiche is great because it can be for any meal and it is super easy to put together. It also freezes well, so this is a great option to use for a freezer meal. This is my go-to meal that I take to new parents because it is filling and easy to store if needed.
Ingredients:
2 frozen pie shells (you can make your own, but this makes it really easy)
2 cups whole milk
4 eggs, slightly beaten
1/2 c sour cream
10 slices bacon, diced and cooked
1/2 c shredded swiss cheese
1/2 small onion, diced and cooked in bacon fat
1 tsp salt
1/2 tsp black pepper
1/2 tsp garlic powder
2 tsp paprika
Preheat oven to 425 F. Place frozen pie crusts on large sheet pan and stick in oven as it heats up.
In frying pan on medium heat, cook bacon until crispy then tip pan up to drain fat to one side and remove the bacon, set aside for later. Put pan back on burner and cook onion in bacon fat until tender and translucent. Tip pan again and remove cooked onion.
In mixing bowl, beat eggs slightly, then add milk. Whisk together, then add sour cream and whisk until there are no lumps of sour cream. Add salt, pepper, garlic powder, and paprika. Set aside.
Take pie crusts out of oven and pop any bubbles that have formed. Sprinkle cheese on bottom of crusts, then spoon bacon and onions into crusts. Carefully pour egg mixture into crusts.
Cook for 15 minutes at 425 F, then reduce heat to 350 F and cook for an additional 30-45 minutes. Quiche is done when it is no longer jiggly in center. Let cool for 10 minutes, then slice and serve. We like to put some sour cream and hot sauce on ours, but it is also really good without anything added.

Yum. I have been making the crustless potato leek quiche from Jessica Fishers 30 minute cook book. Instead of crust sautéed Frozen hashbrows and other gummies go on the bottom. So fast and delightful

Sounds yummy and similar to my go-to quiche recipe! I’ve used frozen puff pastry as a time-saving alternative to making my own pie crust – it comes out so nice and flaky and light!

Yes! I make quiche pretty much like this! I also throw in broccoli bits and shrimp.
