As soon as I saw these cheesecake-filled chocolate eggs on Pinterest, I knew I’d have to make a version of them for Easter this year. I think they are so lovely to look at, and they are really easy to make. Also, they’re delicious.

Here’s how to make them:

Cheesecake-filled Chocolate Easter Eggs

  • Hollow chocolate eggs (and extra chocolate if needed)
  • Oreo cookies (or other cookies or biscuits that you like)
  • No-bake cheesecake mix (This made enough for 8 filled eggs and one regular cheesecake
  • Lemon curd (I think apricot jam or some other yellowish orange jelly would also work)

1) Prepare the eggs. If you are lucky enough to find hollow chocolate eggs that are the right size, all you have to do is carefully cut the top off. Cut away a tiny bit or poke a little hole and then make the hole bigger a little at a time so the egg doesn’t break. I looked and looked but couldn’t find any hollow chocolate eggs, so I used kinder eggs. Since the kinder eggs come apart vertically really easily, I pulled them apart, removed the little toy, broke off the tops, and then dipped the sides in melted chocolate to put them back together again. It was actually pretty quick and easy.

2) Fill the bottom of the eggs with cookie crumbs. I used crushed oreos ( one oreo cookie being enough to fill around three eggs). You can skip this step and it won’t show, but I think it makes the cheesecake taste even better.

3) Pour cheesecake mix into the eggs, right up to the edges. Cover the eggs with plastic wrap and put them in the fridge for around three hours to set.

4) Once the cheesecake has set, use a spoon to make a hole in the midde of the eggs. You can scoop out a little bit of cheesecake if you like, but I just sort of pushed the cheesecake aside and up the edges of the eggs. You want to be able to fit around a half teaspoon of lemon curd in each egg. Stir the lemon curd a little so it softens, scoop a little onto a small spoon, and let it just slip off the spoon into the cheesecake hole in the egg.

5) Serve in egg cups or fill an egg carton and give them away as gifts. Enjoy!
