Fall is probably my favorite season, and I’m sure some of you guys can agree with me! Obviously, one of the most popular flavors of this time of year is pumpkin. There are so many different and yummy ways to use pumpkin in cooking/baking, but these Pumpkin Oatmeal Chocolate Chip Cookies are one of my faves. Nevermind that their title is a mouthful, these are super delicious and will have you in the fall mood in no time…if you aren’t already!
I found this recipe on Cooking Classy and it calls for some pecans or walnuts, but I didn’t have any in my pantry at the time, so I just left them out. However, I love nuts in cookies, so I’ll definitely be adding them in next time!
- 2 1/2 cups of all purpose flour
- 1 1/2 cups of quick oats
- 1 tsp. baking soda
- 3/4 tsp. salt
- 1 3/4 tsp. ground cinnamon
- 1/4 tsp. ground nutmeg
- 1/4 tsp. ground ginger
- 1 cup unsalted butter, softened
- 1 1/3 cups packed light brown sugar
- 2/3 cup granulated sugar
- 1 large egg
- 1 tsp. vanilla extract
- 1 1/4 cups canned pumpkin puree
- 1 3/4 cups semi-sweet chocolate chips
- 1 cup chopped pecans or walnuts (optional)
*Bake at 350 degrees Fahrenheit for 12-14 minutes.
Like any other typical cookie recipe you’ll need to cream together the butter and the sugars first until fluffy. Then add in the egg, vanilla, and pumpkin puree.
Once all of those ingredients are mixed together, then you’ll add in the dry ingredients.
Last, but definitely not least is the chocolate chips! I used some miniature chocolate chips because that’s just what I had on hand. You can totally use regular!
Once your dough is complete, let it chill for just a bit. Then scoop it out onto your cookie sheet!
Bake the cookies for 12-14 minutes at 350 degrees F. This recipe makes quite a few cookies, so if you’re just wanting a small batch I would recommend cutting it in half.

Where did you get your cookie sheet with the target marks? I can never seem to accurately guesstimate how big to make my cookies! By the way, the cookies look delicious too!
