During the summertime I like to make something that will keep for a few days and allow us flexibility on meal times. Also, I need to make something with left – overs for my husband to eat because he works late hours then. This is a favorite, and also a great dish for a tight budget.
Ingredients:
- 1 package of uncooked chicken tenders
- Miracle Whip
- Sour Cream Light
- Celery
- Salt and Pepper
Extra Options:
- Jalapeños
- Grapes
- Tostado Shells
- Tapatio Hot Sauce
Recipe:
- Boil chicken tenders until thoroughly cooked.
- Drain water, put chicken on cutting board and shred chicken.
- Boil macaroni noodles
- Combine cooked noodles and chicken in large container to cool in refrigerator.
- Once cooled, stir in equal parts Miracle Whip and Sour Cream (light) to taste. (Start with 1 cup of each, stir and taste. I find if I wait until the chicken and noodles have cooled, I can use less miracle whip and sour cream, which are not healthy to eat in large doses).
- Add salt and pepper to taste.
- Chop up several stalks of celery for crunch and add to salad.
Extra Options: (My husband and I like more spice than the kiddos, and put the extra options in the salad for us).
- Chop 2-3 Jalapeños add to salad
- Sometimes we add grapes for a fruitier taste or different vegetables like red peppers, cucumbers, tomatoes – whatever is ready in the garden and the family will eat.
Serve for family of 4:
- For the kids – cold and in a bowl.
- For the adults – cold and on tostado shells with Tapatio hot sauce.
This summer salad is easy, affordable, and will keep for a few days. Voila!
