In a perfect world, I would have tons of time to make fabulous gourmet meals from scratch, and then my darling toddler would gobble them up without hesitation and say, “Thanks mommy! More, please?”
Sadly, I don’t live there. Not even close.
My child is picky and unpredictable, and on top of that, while I do my best, I am not always on my “A game” when it comes to cooking. Even on the weeks where I spend lots of time making delicious dinners, sometimes Colin just won’t budge. Meal after meal would go untouched. And since I tend to cook 2 or 3 meals in double batch to last the week, a rejected meal means a couple days of food challenges.
Enter convenience foods.
I’m not thrilled about feeding my child prepared easy “short-cut” kind of foods, but Hive, let’s get real. We can’t be super moms all the time, and it’s nice to have a back-up plan. Here is mine:
2, 3, 4) Cheese and Bean Quesadillas: I am not proud to say that sometimes, I am short enough on time that I don’t even make these in a pan. A quick minute of melting in the microwave, and you can have a fabulous quesadilla, perfect for dipping in mild salsa (and oh, my toddler loves dipping!).
5, 6) Mini Bagels and Cream Cheese: Colin loves anything and everything related to cheese, so he gets very excited to have a bagel with cream cheese for lunch. If I don’t rip it into small bites, though, he will just lick off all the cream cheese and ask for more. Still, these are a hit in our house.
7) Chiobani 2% Greek Yogurt: I find that buying Greek yogurt when it is on sale is the best way for us to go, rather than splurging on the fancy baby yogurt in smaller containers. Colin can crush a 6 oz. container of protein packed Greek yogurt, and often times, I will mix in fruit or granola as well.
8) Turkey Hot Dogs and Sausages: Colin loves anything that I call a “hot dog.” We love the nitrate-free Oscar Meyer Selects Turkey Franks. I also frequently try different brands and flavors of turkey and chicken sausages, from our local store and Trader Joe’s, and many of them incorporate veggies into the sausage for an extra bonus.
9) Trader Joe’s Lightly Breaded Fish Sticks, Reduced Fat: These are quick and easy to pop into the oven, and not only will C gobble them up, but mom and dad enjoy them too!

We definitely go to quasadillas and beans frequently! Yogurt is a big hit, too, and I just started buying greek rather than the baby yogurt because they don’t like meat much, so the extra protein makes me happy! The boys also love egg & cheese roll-ups, frozen veggies that I can just steam in the microwave, and pretty much any bread product.

Quesadillas is a great idea! We keep chicken nuggets ready to heat up (I bake several at the beginning of the week, then we just have to microwave them quickly for lunch/dinner). We also have broccoli nuggets on the ready. D will also always eat applesauce, cottage cheese, and yogurt (plain, whole fat, Greek – yuck!), so we always have at least one of those on hand!

Sweet potatoes. I roast 3 every Sunday and she eats them all week. It is hard to get her to eat any other veggies. Turkey meatballs and kielbasa are a staple in our house for her as well. Cheese and more cheese

We do veggie burgers from TJ’s, Morningstar bfast patties, chickpea burgers, frozen veggies, swt potato frieds, annie’s waffles, yogurt, etc. as our easy meals!

We live off of quesadillas! Miss H loves them and they’re easy for us as well. For her we usually sneak broccoli into them, but also use black beans (she loves beans!!) or chicken depending on what we have on hand.
We also make big batches of the black bean burgers I blogged about awhile back. They freeze great and Miss H loves them. And I like that I full control over the ingredients, but they still are totally convenient to defrost and serve as needed!

A friend gave me a great recipe for chicken and apple meatballs — I make a batch occasionally and freeze them so they’re available on hectic nights when I don’t want to cook. We also do frozen tortellini or ravioli fairly often. Also string cheese is by far our favorite go-to snack!

I always have a selection of frozen veggies and fruits on hand. I make baked ziti, soups and stews, sweet potatoes then portion and freeze. Greek yogurt is always a big hit – I can add in defrosted fruit. I usually have hummus snack packs – to dip with toast or veggies. I also make batches of mini pancakes and freeze so I can just heat up a few in the morning.

I suspect there are more of us out there who have to rely on convenience food than who cook lovely healthy meals all the time for their little ones. We rely on chicken nuggets, fish sticks, yogurt, various fruit, quesadillas, PB sandwiches, and cheese. We usually have a healthy cooked meal for my husband and I, but my daughter is so picky so it’s a rare occasion we can get her to eat it (pizza is probably the exception which I don’t consider that healthy!).

Grilled cheese, PB&J sandwiches, quesadillas (with or without shredded fajita chicken), pizza, hot dogs, chicken nuggets, scrambled eggs, etc. My kid refuses pasta of any sort sadly. I always add a fruit and cheese (per request) if there isn’t already cheese in the main part of the meal.

Quinoa! I make a big batch of quinoa on the weekend and freeze it in small portions. I can take it out and mix it with veggies and cheese for a quick, healthy meal.

I really try not to give Liam a different meal than what we are eating, but I do keep him in mind when preparing food for all of us. Love the bag cheese!

@tinyperson I don’t have a link to provide since a friend gave me the recipe from a book (and apologies, I don’t know which book). But it’s pretty easy:
1 apple (peeled, cored and grated)
2 skinless boneless chicken breasts (cut into chunks)
1/2 red onion, roughly chopped
1 tbsp chopped parsley
1 cup bread crumbs
1 tbsp chicken stock
flour for coating
oil for frying
Press excess moisture out of the apple using a dish cloth or paper towel. Put everything except flour and oil in a food processor and blend. Shape the mixture into balls, roll in flour, and fry in a nonstick skillet 5-8 minutes until golden brown and cooked through.
I’ve left out the parsley and used water instead of chicken stock when I didn’t have either, and they still turned out fine. It makes ~20 large-ish meatballs.

I always keep a few of those steamer bags of veggies (I stock up when they go on a 10 for $10 sale), and then I just toss them with a little olive oil and garlic powder and she gobbles them up. Takes about 5 minutes.

I ran out of tortilla shells this week (I always keep them in the freezer to have on hand) and I briefly contemplated making them from scratch. It’s so hard to justify the time spent making something so simple when I can get a big bag for like $3 at Costco.

Annie’s Mac & Cheese – I usually throw in some frozen veggies (broccoli or peas) while the pasta is boiling
Chicken nuggets, fish sticks – she loves to dip
Chobani greek yogurt w/chia seeds or ground flaxseed
Rice & seaweed (she eats this A LOT)
Steamed sweet potato (especially the purple ones)

Gem is all about greek yogurt as well, we eat a lot of dairy, beans and fruits/veggies. She can be finicky at times. Most of the time I indulge her at lunch but for dinner I try to be a bit more strict and get her to try what I’ve made for the family. over the long haul this has worked but we’ve had some meltdowns and cave-ins
around two it was the worst I was making two or three dinners and then finally decided to quit LOL.

Quesadillas and tortellinis (or frozen ravioli) are constants here. As are meatballs (we divide and freeze in portion sizes) as well as microwaveable rice & edamame. We’ve also had great success with stir-frying shrimp and veggies. You are so not alone in this. Great post!

my go to is jarred tomato sauce! DH insists on making his own but I like to have one or two on hand just incase. I also like to buy the pre marinated meats so I can just pop them into the pan, roast veggies and dinner is done.

Omelets stuffed with veggies are my go-to easy meals for Little M. But we also have a freezer stuffed with meals that I’ve previously prepared so it’s usually where I look first when I don’t feel like cooking or don’t have time.
Little M crushes the 6oz containers in a blink too. And then asks for “moah.” Can you blame them though? Some of those flavors are really good!

I make batches of Mac’n’cheese, portion them into muffin tins and throw the tin in the freezer! Then I have 12 perfectly portioned meals ready to go! I also make batches of sweet potato or carrot and raisin mini muffins- she loves those with peanut butter! We found greek yogurt cream cheese at Dierburgs! She loves that on waffles in the AM!
