I can’t remember where I first saw this recipe for BBQ chicken quesadillas, but it is SO good! I whipped these up yesterday in about 20 minutes! They are perfect as an easy go-to meal for a busy week. My family really loves them and I like that they have a lot of protein.

Ingredients:

  • flour tortillas
  • 1c BBQ sauce
  • 1c prepared brown rice
  • 1 can red beans, kidney beans
  • 1c shredded cheddar cheese
  • 1 chicken breast cooked and cut into pieces (alternatively I use foster farms cooked grilled chicken from the sandwich meat aisle; so helpful!)

Directions:

  1. prepare rice, let cool
  2. heat skillet for quesadillas, set aside
  3. In another skillet warm cooked chicken, BBQ sauce and red beans, about 10 minutes
  4. Add rice and mix thoroughly
  5. Add one tortilla to hot skillet, add cheese and spoon on the rice/bean/chicken mixture
  6. Add top tortilla
  7. flip until both sides are golden brown, cool and cut
  8. Serve with side salad
