Mr. Polish and I are not on a gluten-free diet, but we are lazy cooks.We’ll make anything that has very few ingredients or preparation involved. No shame in our game.
One night we were sitting on the couch and wanted something sweet to munch on, and I decided to make these cookies.
These are our second batch that Mr. Polish made.
- 1 cup peanut butter (I used natural pb, but you can use whatever kind you want)
- 1 cup sugar
- 1 egg
- 1 tsp baking soda
- 1 tsp vanilla
Directions:
Preheat oven to 350° and line two cookie sheets with parchment paper. Mix sugar and baking soda in a bowl, add peanut butter, egg, and vanilla. Blend until mixed. Roll into 24 dough balls and flatten with a fork.
Bake 12-15 minutes.
Enjoy.

I’ve made really similar ones but you rool them in balls and make a depression which you fill with fruit perserves. So good.

Do we need an electronic blender? Or can we just mix by hand/spoon?

@Snowybreeze: I think it would be difficult to mix by hand because of the stickiness of the peanut butter. Certainly you could, but I prefer to use a mixer.

@Mrs. Polish, thanks! There’s someone lazier than you. Me! Haha. Was checking to see if I can avoid digging my mixer out of the basement closet and washing it after used. I don’t really have a sweet tooth, And I’m a pretty terrible baker, but when I saw your recipe, it looked yummy and easy I planned to try it tomorrow. Thanks for posting!

@Snowybreeze: I have a huge portion of my kitchen stuff in the basement because our kitchen is so small, but I leave my mixer on the counter because I know I would never lug it up the stairs! We’re two of a kind! Good luck and I hope you like the cookies!
