We like to bake a lot with and for Miss H, but we aren’t in the habit of giving her a lot of sweets. Until recently, she’d never tried chocolate and she had her first doughnut (and loved it!) at a daycare birthday party.

At home, though, we like to keep it has healthy as we can while still giving her some treats. Needless to say, we’re always on the hunt for new recipes. Recently we came across this recipe for oatmeal raisin breakfast cookies and we have been making them non-stop! We love that there’s no added sugar and that they’re so quick to throw together. Miss H feels like she’s getting a treat whether she’s eating one for breakfast or for an afternoon snack. (Ok, and I sneak them too for evening snacks!)

We’ve made a couple of tweaks to the original recipe and also make a quadruple batch to make sure we have enough for our hungry family! And because there are no eggs in this recipe, it’s also a great one to have Miss H help out with – there’s no worries if she touches the dough.

Oatmeal Raisin Breakfast Cookies

Ingredients

2 C oats
2 C applesauce
1 cup peanut butter
1 tsp cinnamon
2 tsp vanilla
1/3 cup raisins
1/3 cup toasted walnuts broken into small pieces

Directions: Preheat the oven to 350 degrees. Combine the applesauce with the peanut butter, then add all other ingredients and mix until well-mixed. Shape them into your desired cookie shape and bake for about 14 minutes. Enjoy!
