I love gnocchi and so when I found this garlic vegetable gnocchi recipe, I really wanted to try it. I liked that it was mostly vegetables (though we add chicken sometimes), and perfect as a light summer dinner.

The ingredients are:

  • 2 medium carrots
  • 2 medium courgette (I had to look this up… it’s a fancy name for zucchini apparently!)
  • Bunch of asparagus
  • 4 cloves of garlic
  • 2 tbsp olive oil
  •  A package of gnocchi
  • A tablespoon salted butter
  • parmesan cheese (or a similar veggie alternative)

Slice the vegetables thinly (although I cut them in thicker chunks). I also left out the asparagus as I’m not a fan. Take the veggies, garlic, and oil and fry on medium heat until they soften up, and then just let them simmer.

In the meantime cook the gnocchi (gnocchi cooks fast — just a few minutes — and if you let them overcook, they get really messy, so as soon as they start floating up they are done). Combine the gnocchi and veggies together, add some butter if desired, top with Parmesan and dinner is ready.

We have made this multiple times and have added sun dried tomatoes, chicken, celery, and pepper. It’s an easy meal to play around with to see what you like. Juliet loves this meal as she enjoys the gnocchi and zucchini. Drake is a bit pickier but will eat the carrots, so I’ll take it!
