Since Drake started school, I have been trying to make some snacks that he can take with him. I don’t mind sending him in with prepackaged ones, but I do like the idea of making homemade things for him too. I found this easy no bake peanut butter bar recipe the other day and thought he would enjoy it. I can’t send it with him to school because he is in a peanut-free school, but I figure it’s a good breakfast to have in the morning.
The ingredients called for
- 1 cup peanut butter (mine was organic with nuts included in it)
- 1 cup honey
- 3 cups oats
You heat up the peanut butter and honey on the stove until they are liquid like and combined. Then throw in the oats and mix. I ended up only using 2 cups of oats as I felt it looked good enough. Then press the mixture in a flat pan and refrigerate covered overnight. In the morning cut into squares (or whatever shape you want really) and enjoy. I actually enjoy these a lot too and I’m not a huge peanut butter fan. They are a little sweet in my opinion, so I think next time I’ll use half a cup or 3/4 a cup of honey instead of a full one. But overall these have been a big hit for everyone in the house. Easy, good protein and fiber, and yummy… what’s not to love?
