Feel like you’re in a lunch packing rut? Add a little variety to your routine by filling your child’s lunch box with breakfast foods!
Sometimes I feel like I pack the same stuff for my kids’ lunches day after day after day. Even though they’re OK with it, I get bored. I’ve found that I can shake up our routine by making breakfast for lunch. Bonus: I almost always have the foods we need to make this sort of lunch in the fridge.
The centerpiece of this particular breakfast-lunch is a simple rolled omelette.
Begin by heating a small non-stick frying pan over medium heat. While the pan is heating, beat a single egg until it’s combined well. Pour the egg into the pan and then swirl the egg until it coats the bottom evenly.
When the edges of the egg start to pull away from the pan, carefully lift it up a bit.
The egg will be hot, so quickly slide a spatula underneath it and flip it over.
Don’t worry if the egg rips a little or gets rumpled — just smooth it out as best you can, then turn off the stove and let the residual heat in the pan finish cooking the bottom of the omelette.
Slide the egg onto a cutting board and cut it into strips about as wide as your bento box is tall.
Roll the strips of egg up into spirals and pin them closed with decorative picks like these cute little circus animals. Place the omelette rolls into the bento box. Add in a silicone cup full of berries and some toast cut into circle shapes with a cookie cutter. Finish the lunch by cutting a lion shape from fruit leather and placing it on top of the toast.

You could always do this with pancakes too! Maybe sprinkle them with some cinnamon for a change and add apple pieces, and some peanut butter if there’s no allergies or daycare/school allow it!

Oh cute!!!!!! i never thought of rolling up an omelette. We don’t make bentos but try and offer food in a different way.
